The July Daring Bakers’ Challenge was brought to us by Manal from Manal’s Bites. She introduced us to an authentic Palestinian dish from Java that is served as a main meal along with a bowl of soup or a salad. The “Yafawi Sfeeha” or also known as “Milwayeh” which means twisted, is crispy yet tender and full of flavor.  

Sfeeha is a popular middle eastern meat pie usually prepared through out the Levant in the form of minced meat topped flat bread. You can serve sfeeha as a main meal, a snack or a party appetizer depending on your preference and the size you make them.

Home baked buns are real soft and tasty. Here is fool proof recipe for baking buns at home. I filled these buns with mozzarella, but you can fill with any other types of cheese. Baked with love and enjoy soft tender buns.

INGREDIENTS

3 cups Plain flour

1cup plus 2 tbsp. Water

3 tbsp. Olive Oil

1 tsp. yeast

1 tsp. Sugar

1 cup Mozzarella, grated

Sea Salt to taste

2 tbsp. Butter for brushing

METHOD

Warm water and stir with yeast and sugar. Keep aside for 2 minutes to activate the yeast. Fold flour with water and olive oil. Knead till smooth by hands or in the stand mixer. Cover the dough with cling film and keep aside for 1 ½ hours at the warm place. Once the dough is double add salt and knead again to make it smooth. Divide the dough…

This month’s Arabic flavor assignment was to make an Egyptian classic. Meamar Rice.The exact translation of the name is loaded rice. The reason behind the name is that this rice is usually baked in the oven in a clay pot using milk and cream as the cooking liquid. The rice can also be “loaded” with meat or chicken. This started as a peasant dish, in which the farmer’s wife would place all the ingredients : rice, milk, cream, meat and spices in one pot, place it in the oven and forget about it which would give her time to attend to her daily chores. Gradually the recipe evolved to include  a sweet version that is loaded with sugar, nuts and dried fruits.

This month’s secret recipe club assignment was Cheese with noodles by the wonderful and sweet Anna.  She lives in Alaska with her husband, their bunnies,  two cats, and an adorable Great Pyrenees puppy.  When she is not in the kitchen or looking up new recipes, she enjoys spending time with her family and pets, reading,doing crafts, crocheting, sewing, painting , and spending time outside (especially gardening) .

If you have ever eaten shawarma or shish tawook at a middle eastern or Lebanese restaurant, you must have seen the creamy white sauce, with the delectable smell of garlic and scrumptious combination of garlic and lemon. This garlic sauce is known as Toum or Toom  “صلصه ثوم” and if you love garlic, this sauce will be your new best friend. It is great as a dip, spread,or companion to roasted or grilled meat, chicken or fish . It is a great way to jazz up your favorite sandwich.
